Mashed Potato & Carrot With Broccoli & Cheese

Description:
This is a great recipe my son love! Like to share with mummies here!

Mashing rather than pureeing your baby’s food is a good way to gradually introduce more texture. Combining broccoli with creamy mashed potato and cheese is a great way to encourage babies to eat more greens. The relatively strong flavour of the broccoli is toned down by the creamy mashed potato. Broccoli is a true superfood, it is a great source of vitamin C and also contains betacarotene, folic acid, iron and potassium.
Ingredients:
  1. 300g potatoes, peeled and chopped
  2. 1 medium carrot (approx 125g), peeled and sliced
  3. 75g broccoli florets
  4. 4 tbsp your baby’s usual milk
  5. 15g unsalted butter
  6. 40g Cheddar cheese, grated
Preparation:
  1. Put the potatoes and carrot into a saucepan, cover with boiling water and cook until tender (about 20 minutes).
  2. Meanwhile, steam the broccoli for about 7 minutes until tender. Alternatively add to the potatoes and carrot after about 12 minutes.
  3. Drain the potato and carrot and mash together with the broccoli, milk, butter and cheese.
Instructions:
  1. Tips: Vitamin C is water soluble so it is best to steam broccoli as boiling almost halves its vitamin C content. Boiled broccoli retains only about 35% vitamin C as opposed to 72% when it is steamed or microwaved.

It is suitable from 9 months onwards. I use KIRI cheese which is not too salty. you can buy from NTUC supermarket, it's blue color box with KIRI word (not the laughing cow cheese with the cow face).

Hi mum2matty, can i just cut up the KIRI cheese into small cube n feed my 9mth dear son as snack?
