in a large pot, put in all the vegetables except the cabbage and bring to a boil
simmer for about an hour then add the chicken stock and bring to a boil again
allow the contents to cool a bit and blend everything in a food processor (you may have to do this in batches. if you like your soup chunky, do not over-blend.)
put blended contents back into the pot. add salt and pepper to taste. if soup is too thick, add more water or chicken stock.
before serving, finely shred some cabbage leaves and stir them into the soup.
