Pato Tim ala Mae

Description:
A Filipino delicacy which I don't know where it actually originated. All I know is, it's yummy. hehehe...pardon me I don't know how to put things in details about it. Just try it to taste it!
Ingredients:
  1. 1 whole duck
  2. 1 bottle of rice wine
  3. 1/2 liter sprite
  4. 1 bottle Mang Tomas sauce
  5. 1/2 liter Pineapple Juice
  6. 1 liter cooking oil
  7. 1 big onion (sliced)
  8. 2 tbs minced garlic
  9. 3 stalks celery (cut)
  10. 1 tsp salt
  11. 1/2 tsp pepper
  12. 1 cup brown sugar (depends on how sweet you want it to be)
Preparation:
  1. Preparation is easy. Clean the duck & all ingredients that needs to be wash.
Instructions:
  1. Rub minced garlic & a little salt into the duck, put a few onions inside it's tummy.
  2. Place it in a big pot, put cut celery stalks, garlic, onions, sprinkle pepper & salt to taste then pour on rice wine & sprite then bring it to boil until the duck becomes tender.
  3. When it's already tender, get the duck & hang it for 15 minutes to dry. While letting it dry, ready the heated cooking oil & deep fry the duck until it becomes reddish brown.
  4. After frying the duck, put the pineapple juice in a stirfry pan then boil the fried duck into it in a medium fire for 15 minutes.
  5. Just as when it is boiling put brown sugar to the juice to make it a little sweeter. Take the duck & place it to a serving plate.
  6. How to make the sauce: Pour Mang Tomas sauce to the glazing pineapple juice after you have boiled the duck then stir to blend the taste. The taste should be a little sweet & spicy.
