It's very simple and you can use anything you like from chicken to seafood.
How much of the ingredients depends on the serving and what you like (some people like more noodles than "filling" and vice versa). Am afraid I dont't have exact measurements because I cook the old school way like my mum and grandma - guess-timate! :P
Meat (chicken, prawn, squid, etc)
Cabbage or chinese cabbage - sliced into 1 cm rectangle pieces
Beehoon - soaked in lukewarm water until soft (not mushy), drained and covered
Dark soy sauce
Pepper to taste
You need to fried the sliced shallots until fragrant and slightly brown before adding in the meat and veg.
Fry until cooked then, add in the oyster sauce, dark soy sauce and soy sauce (try small quantities first, at least if it's not salty enough, you can add more - I usually go for 1 tablespoon of oyster sauce, a tsp of dark soy sauce and maybe 1 to 1.5 tsp of soya sauce - to taste - for a serving of four people).
Then toss in the noodles and stir fry well. You may need to add some water (this depends on how soft your noodles are AFTER soaking) but maybe a couple of tablespoons first because if you add too much, your noodles will become soggy.
Fry until the water has evaporated and the noodles look dry.
Turn off the heat and you're done!
