Im a full time workimg mum as well & i did cook porrridge for my son too.. he is coming 16Month Big now.. If you can dont can drop mi a email or i can call you to provide you hw to prepare porridge & not congee As you say you read till blur blur ^^.
Here a simple one:
Ing: Minces meat , 干贝 , slice fish , Cut veg - Addition item you migh want to add (gou*qi* / Carrot / Pumpkin / sweet pototaes )
. Wash 干贝 & soak in hot water ( Mostly i will soak for 15min )
. Boil water till hot add in 干贝 as well as the water. Let it boil for 20-25min ( Soup will be more sweet ) Sometime i will add in Gou*Qi* as well.
. After that put in your washed rice. If you want to add carrot put in early. Cos it took time to soften it
. I will let it cook for 10min after that i will add in my mince meat then lastly i will put in my fish. ( I buy salmon fish for my son)
. If you want to put veg rmb cut it very small Then put in last in the cooking.
