Anyone know how to make Taiwan Version of pineapple filling? I find theirs is rather soft and smooth and fragrant too. If I am not wrong... they did add vanilla in it.

Ingredients
Makes 16 pieces of pastry using Pooh cookie mould

100g butter
60g icing sugar
1/4 tsp salt
1 egg
1 egg yolk

Cake flour 145g
Bread flour 45g
Corn starch 25g
Coffeemate creamer 15g
Milk powder 1 tbsp

Pineapple filling: 352g divided into 16 balls each of 22g

Method
1. Beat butter with icing sugar and salt until soft and fluffy.
2. Add in egg and beat until well blended.
3. Add in egg yolk and beat until well blended.
4. Add in all the powder mixture and mix well until a dough is formed.
5. Put dough in a freezer bag and put it the freezer to rest for 25 minutes.
6. Remove dough from freezer and separate into dough balls of 24g each.
7. Pat dough balls on palm into a flat round shape and wrap in 22g of pineapple filling. Shape it round.
8. Put the rounds into pastry mould to shape it.
9. Bake at 190C for 25 minutes or until golden brown.

Notes

1. I bake in the middle rack for 20 minutes then move it to the upper rack for 5 minutes to get the golden brown colour.
2. Original recipe calls for 150g butter, I reduce it to 100g and this makes it easier for beginners to handle the dough.

Is time of the year again.... to bake pineapple tart for the new year.... if you see this thread.. you probably have come to the right place. :) I see if I can post you the step by step of how I make this pineapple.

I am still trying my luck on making the pineapple filling as similar as those sold in taiwan..... I still think they have added vanilla favour in it... and winter melon??
