Rub minced garlic & a little salt into the duck, put a few onions inside it's tummy.
Place it in a big pot, put cut celery stalks, garlic, onions, sprinkle pepper & salt to taste then pour on rice wine & sprite then bring it to boil until the duck becomes tender.
When it's already tender, get the duck & hang it for 15 minutes to dry. While letting it dry, ready the heated cooking oil & deep fry the duck until it becomes reddish brown.
After frying the duck, put the pineapple juice in a stirfry pan then boil the fried duck into it in a medium fire for 15 minutes.
Just as when it is boiling put brown sugar to the juice to make it a little sweeter. Take the duck & place it to a serving plate.
How to make the sauce: Pour Mang Tomas sauce to the glazing pineapple juice after you have boiled the duck then stir to blend the taste. The taste should be a little sweet & spicy.
