Hi,

Any good muffins recipe to share? I want to learn to bake Choc.Muffins n Banana Muffins for my kids.

Do you know of the instant one? Betty Cocker? All you need is to follow the box and stir the flour, egg etc together and you are ready to bake.

Very easy and taste good..... can try if u want :)

Ya, I hv tried the instant one for Blueberry Muffins but different brand I think. Was very nice too.

Where can I buy Betty Cocker brand? Do you know the price? Will give it a try too.

But still I just would love to learn to make myself instead if anyone else could share.

Pistachio Muffins

Ingredients(A)
250g Butter
200g Castor Sugar

(B) 5 eggs
1 tsp vanilla essence

(C) 500g Plain flour
2 tbsps baking powder

(D) 250ml fresh milk

(E) 100g Pistachios, chopped

Instructions

1. Beat (A) until creamy, gradually add in eggs and vanilla essence.

2. Stir in (C) and (D), pour into muffin cups.

3. Sprinkle pistschios on top, bake at 180 degree for 25-35mins (depending on the brand on the oven).

Special notes:

U can substitute pistachios with cashew nuts, walnuts or Macademia nuts.

I normally get them at S&S or cold storage... I think was $5+... but long time no bake liao... :001_302:

Banana & Oats Muffins

Ingredients:
170g unsalted butter
210g caster sugar
1/2 tsp salt
2 eggs, beaten
90ml soya milk
300g banana flesh, mashed
1/2 tsp banana essence
270g plain flour
2 tsp baking powder
1/4 tsp bicarbonate of soda
90g rolled oats, grounded

For the topping:
2 tbsps rolled oats

Instructions:
Preheat oven to 180 degree. Grease muffin tin or line muffin tin with paper cups.

Melt the butter, sugar and salt over low heat. Remove, cool slightly, stir in beaten eggs, soya milk, mashed banana and banana essence.

Sift flour, baking powder and soda, combine with ground rolled oats. Fold flours into egg mixture, mix until just combined.

Spooned the batter into the prepared tins, sprinkled ome rolled oats on top. Baked for 25mins or until cooked.

Removed tin from the oven and cool for 5mins. Then remove muffins and cool on a rack.

Oh yes, I saw that at S&S recently but no time to try baking yet cos kid having their exams now. Got to prepare with them too...BUSY!

Just saw your above recipe, may I know if I can replace soya milk with fresh milk? Oso 90ml? Will it make a difference in any way to the muffins?

My kids love banana muffins, really thanks so much for your recipe.

I've tried this recipe n it is moist n fluffy . It is 1 recipe tt was tried n tested by many bakers n moms .
Banana Muffins

2 cups all-purpose flour
3/4 cup white sugar (original recipe yields for 1 cup)
1 cup mashed ripe banana
1/2 cup margarine or butter
2 eggs
6 tablespoons UHT milk
2 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt

Directions
1. In a bowl mix flour, baking powder, baking soda,
salt, and cinnamon and set aside.
2. In a separate bowl cream margarine and sugar, add eggs
and mix until smooth. Stir in milk and mashed banana and
mix well.
3. Fold in flour mixture into the liquid ingredients until combined.
4. Fill greased muffin tins two-thirds of the way full.
5. Bake in a preheated 170 degrees C oven for 25mins
