potato chicken stew

u will need:

1) baby potatoes if u can find, if not normal size potatos, peeled and cleaned

1a) 2-3 dried scallops.

2) half or whole chicken, chopped into bite sizes

3) onions, sliced thinly like onion ring. Juz get 1 big one will do.

4) salt and pepper

5) carrots, chopped into bite size

6) ginger, sliced thin strips. About a handful.

7) minced garlic, about half a tablespoon.

6) chicken stock (two bowls)

Preparation:

a) Use a pan, put in the sliced ginger and stir fry. Add in some minced garlic to stir fry together.

b) Fry on high heat, once fragrant put in chicken, pinch of salt, sesame seed oil, 5-6 drops, stir fry on high heat. Den turn to medium heat when u see that it gets too hot. Put in Chinese cooking wine (Hua Diao Jiu), about one round of the rim of the pan(one tablespoonful), stir fry for a while and dish up (chicken no need to be cooked)

c) In a claypot with cooking oil, put in the onion. Stir fry until it turns soft, on medium heat. Add in carrots and potatoes. Add in some oyster sauce (half a tablespoon) Stir for a while till fragrant. Add in the half-cooked chicken from above item b). Add in half tablespoon of oyster sauce again. Stir for a while such that the chicken is coated evenly with oyster sauce. Lastly, pour in the chicken stock. The quantity of chicken stock should be able to cover all ingredients inside. Let it come to boil and add in dried scallops. When its boiled turn to low heat and simmer.

d) tats it! Chicken potato stew! EnjOy~

U Can mix and match the ingredients to get different stews coz any stews with chicken are delicious.
